Parsley

A low-lying green plant with leaves that divide into triple lobes. Parsley is used as a herb or spice, and was therefore well known to the gardener Sam Gamgee. It grew across Middle-earth, being found as far north as the open space of the Bonfire Glade in the Old Forest, on the borders of Buckland. It was also found in the warmer climates of the fragrant land of Ithilien in eastern Gondor, far to the south of the Shire.

The variety of parsley found growing in the Bonfire Glade is described as 'wood-parsley', a somewhat obscure description. This most likely refers to the plant more usually called 'cow parsley', a taller more robust plant than true parsley that does indeed commonly grow in open grassy areas like the glade in the Old Forest.
